This is usually how I judge. I live in SF, and rarely go to Chinatown (too many people), so can't recommend anywhere specific. I do know, though, that locals frequent good places. If you're willing to be adventurous and willing to travel, the real deal is in the Richmond District out west or south of Golden Gate Park in the Sunset. But that's a story for another day!
