Generally, there are long distance buses between all southern African countries. Alot of the routes will be between capital/big cities, with varying levels of public transport within different countries.

With trains, options are limited. There is a decent network in South Africa, with some off-shoots into neighbouring countries. Another popular option is the Tanzam Rail between Dar es Salam and Kapiri Mposhi (Zambia, near Lusaka).

With Zimbabwe, with all sorts of transport, routes and frequency are becoming increasingly unpredictable, so you might want to think carefully about it and get up-to-date information.

Most of the guidebooks are pretty good on this sort of thing, but, in short, your planned trip should definitely be possible.
