I suggest you to choose a certain part of Europe (e.g. Southern - Italy with it's islands Sicily and Sardinia, Greece, Spain, Portugal) and to rent a car for visiting it. You will be mobile and independent. The places to visit really depends on your interets - if you want some cultural cities with rich art and architectural values or more active holiday including some sports etc. Europe is still very different and ylu will definitely find something for you.
